Cheese 'n' Jalapeno Corn Muffins. That is an unusual name for a muffin and I have never heard of it before! Today my task was to chop the jalapeno and decide how much we gonna use. We worked with everyone of our unit so we were a group of 5 people to make 6 muffins this time. We had a fun and relaxed time and we were so on time.
The combination of yellow cornmeal and Cheddar is really good and the jalapeno is the one thing that makes it special.
I think it is great that you can choose how spicy you want them to be by changing the amount of jalapeno you put in the batter. If you do not like spice at all you could also replace the jalapeno with just an usual green pepper.
