Peach Cobbler


Today we made a Peach Cobbler. I have never heard of the word cobbler before so I looked it up in the Internet. The definition of cobbler I found is: "A deep-dish fruit pie with a thick top rust." (http://www.thefreedictionary.com/cobbler). So our goal is to have a thick top crust! Today I made the mixture which is poured over the peaches. We used a 15 cm deep-dish which turned out to be the perfect size. This time we used the biscuit method because solid margarine is used in this this recipe. I really love peaches so I was so interested how this deep-dish fruit pie tastes. We combined the dry ingredients and stirred the milk into the mixture with a fork and after we added all the milk we had a sticky dough. We used spoons to portion little balls of the dough which we dropped evenly over the peaches. Everything worked very well and we were again on time. While the cobbler was in the oven the fruit juice bubbled thickly. Our Peach Cobbler had a thick top crust which was slightly browned and the sugar mixture we dropped over the peaches was stuck.
The pie was so tasty! The peaches and the batter were still warm and the sugar-juice mixture gave everything a very sweet touch. I would love to try this recipe again in a slightly different way with plums or cherries.

Cheese 'n' Jalapeno Corn Muffins




Cheese 'n' Jalapeno Corn Muffins. That is an unusual name for a muffin and I have never heard of it before! Today my task was to chop the jalapeno and decide how much we gonna use. We worked with everyone of our unit so we were a group of 5 people to make 6 muffins this time. We had a fun and relaxed time and we were so on time.
The combination of yellow cornmeal and Cheddar is really good and the jalapeno is the one thing that makes it special.
I think it is great that you can choose how spicy you want them to be by changing the amount of jalapeno you put in the batter. If you do not like spice at all you could also replace the jalapeno with just an usual green pepper.
I can really recommend this recipe and I like that it is something new and unusual.

Almond-Apricot Crunch Muffins


Today I baked the first time in my new baking class. Everyone of the group got a task and we started right away. My task was to do the topping. This was really easy but it tasted so good! The recipe itself is very simple but the combination of apricots and cinnamon is amazing! I can really see them in wintertime as a sack or a little present you can give to a friend.
Everyone of my group is from Europe so we are all not familiar with the Canadian measuring system and some ingredients so my friend did a little mistake and put 5 ml baking soda instead of baking powder into the batter. We decided to see it as an experiment and were so surprised.
They looked and tasted so amazing.
So do not mind using 5 ml baking soda instead of baking powder instead and have a great result. Maybe our muffins looked and tasted so good because we used the biscuit method.
